Nose
The 2014 Pajoré Barbaresco shows a fruity lightness reminiscent of red currants, sour cherries, pomegranate seeds and ripe plums. With oxygen contact, fine cedar wood and herbal notes are added. The nose seems elegant, almost Burgundian, the scent of wild roses and violets underlines its feminine character.
Palate
On the palate, the 2014 Pajoré Barbaresco is delicate and demanding with its fine acidity, which is accompanied by an extremely fine-grained tannin structure. The whole is coated by the fresh and red berry fruit of the nose and a concise ;inerality. A wine that beguiles and at the same time pleasantly challenges. It will be exciting to follow its evolution over the next few years.
Recommendation
For the moment, decant it with enough forward flow and serve it slightly chilled.
