South Tyrolean pergola on very steep terrain. Loamy, sandy soil, relatively shallow. Volcanic origin and much quartzite slate.
Info about the expansion
Biodynamic without the help of tractors. 90 % Lagrein, 10 % Vernatsch, handpicked into small crates of very crisp grapes. Spontaneous fermentation on skins for 36 hours for the Vernatsch, the Lagrein was pressed directly. Filling with frozen must in October 2021, ageing in bottle until March 2022.
Color
Slightly cloudy pomegranate red with pink and violet reflections/fine perlage.
Nose
This 2021 MIAU! is simply wonderfully animating and fruity on the nose. Vino Rosato Frizzante. Acerola cherry, wild raspberry and blackberries join hands here and combine perfectly with wild mint, sage and fresh thyme. Its yeasty notes enhance the freshness kick. Grapefruit as well as grapefruit peel and malty hints point to its complexity, far from any mainstream. You can already hear the cat purring as you look forward to the first sip.
Palate
Fruity, drinkable and extremely invigorating thanks to the carbonic acid, this sparkling wine is simply a pleasure to drink on any occasion. The fine tannin not only awakens the desire for another glass, but also the appetite for the combination with spicy delicacies. Top stuff for every occasion, not only in fine weather!
