Kai Schätzel sees his way of cultivation as an answer to the questions that global warming poses for modern viticulture. As early as 2008, he began using organic, biodynamic and sustainable elements to manage the vineyards on the Rote Hang in such a way as to raise healthy and self-sufficient vines that look after themselves independently and are not dependent on human help. This includes slowing down the ripening process and using dry farming to bring the mountains into a new balance. The grapes for the wines are harvested according to the principle of the self-developed 'golden cut'. Around 90-100 days after blossoming, they are harvested in several passes exactly when their colour changes from green to golden yellow. In the winery, they are trampled underfoot before lying on the mash for around a week before being pressed. In a good 80% of all cases, there is no pre-clarification before the must is transferred by gravity to lump and half-barrels, where it begins to ferment spontaneously and remains on the full lees until bottling. The wines presented in Wiesbaden and described here were specially bottled three days before the premiere; another batch is still on the full lees at the winery. The Pettenthal is Schätzel's stoniest and most closed vineyard, which from experience needs the longest time.

Nose

Herbaceous nose with a conglomerate of fennel, aniseed, lemon thyme, then lemon zest, green mandarin, quince and vetiver. With a distinctive Sponti note and a slight bump on the nose, the Pettenthal is underpinned by extract-rich fruit that does not indulge in primary aromatics but knows how to deal substantially with essences. It is always light-footed, fragrant and almost ethereally floating on a solid mineral foundation.

Mouth

The 2018 Pettenthal from Kai Schätzel is cool and lean on the nose, yet focused and taut with a fine salinity on the palate. Contrary to its delicate appearance on the nose, it builds up uncompromising pressure on the palate. With high inner tension, its ripe acidity is vertical and models it as a sinewy, pithy experience, the youthful tannins fine as sandpaper with a tart aromatic component. The citrus-driven fruit nestles almost leptosomally against this structure, giving it aromatic depth. Everything is reduced to the essential, without ornamentation and frippery, yet always substantial without drifting into the bolder. A wine with great inner peace and excellent storage potential.
