Nose
The nose of the 2018 Imalaya from Domaine Roc des Anges oscillates between wet stones, dried fruit and herbal-salty aspects. Grown on pure granite, the nose already announces a sparse drink, garnished with Mediterranean herbs and dried lemon peel that may speak only tentatively of fruit flavors. The lightly ethereal top note of citrus and ground
Oyster shells make the papillae positively sac-bounce in anticipation.
Mouth
On the palate, all the impressions of the nose are confirmed. The wine from the rare Carignan Gris from the planting year 1961 literally overruns you with uncompromising minerality after wet river pebbles. It shines without any ornamentation and decorative ornaments, but shines as a purely haptic sensation on the palate. With mouthwatering extract, it is controlled over acidity that alternates between lemon zest and sourdough bread crust. Powdered with ground oyster shell, the mouthfeel is outlined by the long-tensioned acidic nerve, cooling minerality and herbaceous, fruity extract. Grown at 500m above sea level, it sets the standard for Roussillon, the warmest part of France, at a svelte 12.5%.
