Background information about the wine
Forebodingly on the sites of St. Severin, who retreated there over a millennium and a half ago for spiritual contemplation, lies the Weingebirge. The subsoil there is characterised by clay, loess and paragneiss.
Manufacturing process
The wine reaches its perfection through quiet maturation in a large, antique barrel for around 18 months. Bottling takes place specifically on a fruit day.
Visual impression
The wine is visually characterised by a strong golden yellow that lightens only subtly towards the rim.
Olfactory impression
The 2018 Im Weingebirge Grüner Veltliner Smaragd is greeted by a lush fruitiness that beguiles the nose with its bouquet of ripe mirabelles, apricots and oranges. Notes of playful honey, malty nuances, a hint of cedar and a potpourri of wild herbs such as nettle, thyme and rosemary complete the aromatic experience. The still clearly perceptible youth of the wine suggests great potential, which unfolds especially when decisively decanted or enjoyed from large glasses after being opened for several days.
Taste experience
The skilful interplay of juiciness, restrained fruit sweetness and a touch of refreshing acidity creates a harmonious palate pleasure. This Grüner Veltliner already hints at its great future in its youthful phase and definitely needs sufficient oxygen to present its full range. Rustic and authentic dishes are the ideal companion for this wine. It is strongly recommended to decant it!
Food recommendation
Pair this wine with dishes such as a fresh risotto with peas and mint, a lovingly prepared beef roulade in pumpkin seed crust or a crispy chicken thigh served with roasted corn and root vegetables.
