Information

The Burgundy Rouge comes mainly from Saint-Romain from vines that are at least 30 years old. It is largely of Bourgogne quality, but also comes to a small extent from declassified village sites. The vines stand at around 400 metres above sea level. After hand harvesting, partial destemming and spontaneous fermentation took place in stainless steel cuve and a blend of Pigeage and ReassemblyThis is a process of punching down and overflowing of the grape marc. Malolactic fermentation took place spontaneously in the barrels. The wine was aged for ten to twelve months in a mixture of 228-, 350- and 500-litre barrels.Barriques and in Tonneaux, of which a maximum of 10 % are replaced annually. The wine was tasted daily and the barrels were drawn off when Frédéric Buisson deemed it appropriate. It was fined with bentonite and filtered only very coarsely. Sulphur was only added at bottling with a maximum of 40 to 50 mg/l total sulphite.

Nose

This wine is a Burgundy Rougeas one would wish it to be. It formulates a claim, but is uncomplicated and direct to place, it seems inviting and open-hearted. The 2021 vintage offers notes of ripe wild strawberries, raspberries and black cherries, some vanilla and at the same time subtle earthy notes of peat and dry wood.

Palate

On the palate, the wine appears juicy and fresh, but also slightly silky. The fruit proves to be dark and ripe, but in parts also crisp with a little sour cherry. The acidity is lively, prominent but not demanding, the tannin is present and fine-grained. The Bourgogne appears pure, vital and animating to drink with a good length and plenty of draw.
