Wine Description for Grande Cuvée Blanc de Blancs Sekt Brut Nature 2017 by Franz Keller

Colour & Appearance
Luminous, intense golden yellow in the glass. The perlage displays itself as fine-boned and lively – a visual promise of the quality to follow.
Nose
This Blanc de Blancs captivates immediately with its complex aromatics. Juicy notes of apple, pear and quince meet vineyard peach, whilst 63 months of yeast ageing leave their mark: brioche, pastry and hazelnut lend depth. Particularly charming are the delicate maritime hints of seaweed and shell, along with a whisper of saffron. The mineral precision underscores its Baden provenance.
Palate
On the palate, the true class of this sparkling wine reveals itself. The invigorating perlage is perfectly integrated, never intrusive. Juicy fruit harmonises with spicy structure and fine minerality. Delicately saline nuances and a charming spice note provide tension. The Brut Nature dosage (zero residual sugar) allows the Chardonnay its authentic expression – bone-dry, precise style with impressive length.
Finish
Persistent, mineral-saline, with fine spice and a refreshing acidity structure that invites the next sip.
Grape Variety & Vinification
Pure Chardonnay from Baden, traditionally vinified according to the Méthode Champenoise. The 63 months of yeast ageing lend this sparkling wine extraordinary complexity and creaminess. Disgorged in November 2023, it presents itself in perfect drinking condition.
Food Pairing Recommendations
A versatile companion to fine dining: excellent with scallops in saffron sauce, grilled turbot with Beurre Blanc, or classically with asparagus with pear and sorrel butter. Also as an apéritif, it is in a class of its own.
Special Features
Franz Keller, renowned for his Michelin-starred restaurant Schwarzer Adler, demonstrates with this Blanc de Blancs that Germany produces world-class grower sparkling wines. The extended yeast ageing and uncompromising Brut Nature style make it a serious contender with Champagne.
