Info

CiFRA comes from vineyards in Riparbella on the Costa Toscana IGP, which are farmed biodynamically at 220 - 250 metres above sea level. All of Duemani's vineyards are Demeter-certified. CiFRA is made from pure Cabernet Franc grapes. The vines are 18 years old and stand on calcareous soils that are rich in clay and skeletons.

Temperature regulated spontaneous fermentation in cement tanks with only ten tanks of mash contact are always standard at CiFRA. Racking was followed by maturation in the cement tanks. No further racking or filtration until bottling in summer 2021.

Nose

CiFRA from the 2020 vintage intensively blends darkest fruits. Morello cherries stand clearly next to sweet cherries and blackberries in the glass. Plums, mulberries and figs complement this. Elderberries and raspberries play a subordinate role. Delicate floral hints recall pansies and violets. The fruit is contrasted by a cinnamon spiciness that conveys a trip to the Far East and a feeling of comfort. Beetroot combines fruit with earthy attributes. Dried mushrooms and pine cones then generate the way back to native forests. The nuances of liquorice and After Eight chocolate, which can be perceived in the background, also have an ethereal effect.

Palate

On the palate, the fruit clearly takes the reins again. Loudly concentrated and characterised by a very present but well-balanced acid structure, it makes its way. It hits the palate in a targeted manner. The fruit literally splits up there. Some of it sticks to the palate for minutes. Blueberry, raspberry and blackberry are omnipresent and hardly want to give way. The second part manages to build a bridge towards elegance and finesse. The desire for more is awakened.
