Insight into the wine
The exquisite Chardonnay from the 1er Cru of the Saint-Aubin site spans 0.7 hectares of our vineyard. Planted in 1988, this gem immediately south of Mont Rachet overlooks Chassagne. Each grape is carefully hand-picked and transferred to crates to ensure its integrity. Upon arrival at the wine press, they were gently crushed and pressed in a timeless basket press. Before alcoholic and malolactic fermentation took place, the must was stored in tanks for two to three days to clear out the lees. The final tasting process took place in used barrels, during which we did not feel the need to fining or filtering the wine and only applied light sulphurisation.

Scent
The Saint Aubin 1er Cru shows a rich fragrance. The Chardonnay exudes aromas of ripe pears, citrus fruits, pineapple and crisp apricots. They combine harmoniously with notes of lemon curd, white nougat and hints of melted butter and crushed stone.

Taste
On the palate, the 1er Cru unfolds its fullness and juiciness, embedded in a seductively silky and almost creamy texture. Notes of pears and vanilla merge with a hint of ripe quince and white nougat. Alongside the sublime ripeness, a crystal-clear, tangy acidity structure can be discerned. It gives the wine the perfect balance and tension. One notices the restrained ageing, which reveals a high degree of transparency, paired with elegance and finesse.

Gastronomic recommendations
Try the wine with a grilled fish fillet with a creamy hollandaise sauce or with fried oyster mushrooms with a squeeze of lemon juice. Grilled scallops accompanied by a fresh salad with a citrus-coriander dressing also harmonise perfectly with this Chardonnay. A vegetarian option is oven vegetables with a touch of truffle oil.
