Wine information
The wine comes from a 2.5-hectare plot above the premier cru vineyard Vau Ligneau in Beine. The site is predominantly calcareous and south-facing. The wine was produced and matured without the addition of sulphites.
Color
medium straw yellow, slightly cloudy
Nose
The Chablis has an open and inviting character right from the nose thanks to the absence of sulphites. It has a charming flavour of yeast, crunchy apple, a little malt, apple cider, iodine and salted lemon.
Mouth
On the palate the à l'Ouest for a sensual creaminess and a texture with a lot of melting, but also for a lot of pressure due to the agile acidity. The wine is slightly salty, slightly phenolic, citric and very mouthwatering.
