Wine Description for Chablis 1er Cru La Fourchaume “Dédé” AOC 2022 from de l’Enclos
- Colour & Appearance
- Clear, medium straw yellow with brilliant clarity – a classic Chablis profile that promises purity and precision.
- Nose
- Elegant and restrained, the Dédé opens with precise aromatics of green and yellow apples, pear slices and white peach. These are joined by lemon zest, a hint of salted lemon and delicate white flowers. The oak note from the Demi-Muid ageing shows itself subtly with a touch of vanilla – never intrusive, but perfectly integrated.
- Palate
- On the palate, this Premier Cru reveals its true class: silky and juicy at once, with impressive weight and vibrant energy. The citric fruit is accompanied by notes of ripe pineapple, whilst an increasing salinity lends the wine tension and depth. The oak is present but skilfully woven – it supports without dominating. A zesty-peppery component brings additional complexity.
- Finish
- The finale is long and vibrant, marked by an electrifying minerality and lingering salinity. The wine’s energy builds right through to the end – a sign of great ageing potential.
- Terroir & Origin
- The La Fourchaume parcel, one of Chablis’s finest Premier Cru sites, was planted in the 1950s by André “Dédé” Tremblay, the winemakers’ grandfather. The old vines are deeply rooted in the characteristic Kimmeridge limestone and clay soils that give this Chablis its distinctive minerality.
- Grape Variety & Vinification
- 100% Chardonnay, hand-harvested on 3rd September 2022. Direct pressing and fermentation, followed by 13 months’ ageing in used Demi-Muids (500 litres, vintage 2018). Light filtration and minimal sulphiting (51 mg/l total sulphur). A vinification that demonstrates precision and respect for the terroir.
- Food Pairing Suggestions
- Excellent with sole in lemon-caper butter, steamed sea bass with lemon-miso crème or surprisingly also with monkfish cutlet with caramelised apple slices – the wine’s acidity and minerality harmonise perfectly with the sweetness of the apples.
- Special Features
- A tribute to the winemakers’ grandfather from the estate’s oldest parcel. A Chablis that perfectly unites tradition and modern vinification – with ageing potential for the next 8-10 years.
