Tasting note from from 08.02.2022, Copyright Sebastian Bordthäuser

This 100% Corvina Veronese wine comes from Valpolicella Classico, the historic heart of Valpolicella. Grown on the hill "Ravazzol" at 200-300m, the average age of the vines is over 60 years and gives naturally low yields of 5-6 tons per hectare. The soils consist of clay and limestone and are interspersed with rocks and small stones. Only when the summer is not too hot and the autumn not too wet is the pure Corvina Veronese produced. The harvest for this wine takes up to four weeks in several passes. The grapes from the first selection are briefly dried and then pressed with the grapes from the following harvests. The must is then fermented together in open 1,000-litre wooden vats and, after fermentation, transferred to another vat of the same size, where it matures for 36 months closed before being put on sale.

Color

Transparent ruby red with brick red reflections.

Nose

Red-fruited with a certain concentration, the 2016 Corvina Veronese from Ca' la Bionda shows black cherries, cocktail cherries and some candy apple on the nose, along with dried fruit, some sloe and roasted almond. Delicately spicy notes of black cardamom and pepper give it additional contour. A rare wine that is only produced in special vintages.

Mouth

Super-silky with pro-active monster cherry on the nose, the 100%-ige Corvina is contoured by delicate tannin and highly elegant bitters that balance the expansive fruit superbly. Transparent with a firm grammage, it is gripping and builds enormous thrust on the mid-palate. With nonchalant ease, it combines its concentrated extract with cathedral length and a cool finish.

Food recommendations from Sebastian Bordthäuser

  • Fermented beetroot with goat's cheese, watercress oil and wild herb salad
  • Mackerel with black salsify, hazelnut crumble and red wine butter
