Nose
On the nose, the 2020 Bourgogne Blanc "Les Saussots" convinces first and foremost with a lot of varietal and regional typicity. In addition to the obligatory mix of yellow fruits and clear, stony accents, it can awaken plenty of memories of good patisserie. Apricot tart, dried peach as well as tarte tatin are clearly perceptible in the nose. Quinces show up in a caramelised state and lemon provides both tart and refreshing accents in the form of zest and zest. Very delicately, it also evokes memories of yeast plait. A little grilled pineapple combines the idea of yellow fruit with roasted aromas.
Palate
Fortunately, in the mouth it seamlessly follows on from the impressions gained. The fruit, however, is clearly restrained. It opens the curtain for a polished, powerful flavour. This impression is underlined by plenty of minerality and a good portion of saltiness. The acidity brings structure into play, works brilliantly against the minerality and provides it with length. This vertical component makes it appear full of finesse. Aromatically, citrus fruits and fresh garden herbs come to the fore and dominate the finish for a long time. A delicate bitter note rounds it off very successfully.
