North-south of Aix-en-Provence, under the protection of the Montagne Sainte-Victoire, 30 hectares of Château Revelette's vineyards spread out, divided into 17 parcel areas near Jouques. This is where the Rosé 2021 is produced, mainly from Grenache, but also from Cinsault, Cabernet Sauvignon, Carignan and Ugni Blanc. Each grape variety is fermented individually, but after undergoing maceration for eight hours. Malolactic fermentation was only used for some of the grape varieties, while ageing took place in cement tanks.
The wine presents itself in a classic salmon pink.
This fragrant and elegant rosé is reminiscent of summer in Provence. A symphony of pink grapefruit and lemons, white peach, hints of rhubarb and red currants. A melange of Provencal herbs, traces of chalk and white flowers support the fruit flavours and give the wine a fresh, juicy and summery note.
The wine spoils the palate with juiciness and silkiness and leaves the impression of a pleasant freshness. The acidity harmonises silky and round with a vital minerality that supports the fresh fruit notes of rhubarb and ripe green tones. Grapefruit, crisp cherries and wild strawberries join in.
Try this wine together with grilled prawns, refined with a house butter sauce, or combine it with bruschetta - crusty bread topped with fresh tomatoes and juicy grilled mussels. Or how about a hearty tart, dressed with tomatoes and green asparagus?
