Background information on the drop
The summit of the Béru vineyards, Montserre, is a unique geological structure, marked by the interaction of fossil limestone slabs. The predominant white pebble surface provides earthy accents. As part of the production process, the grapes were harvested by hand, gently pressed and fermented naturally. The Chablis matured in both smaller and larger used wooden barrels, ageing on its fine lees. No filtration or fining was used during bottling. Remarkably, it did not undergo any additional sulphurisation in 2020.

Aroma
The bouquet of the 2020 Chablis exudes a purity and precision that can only come from this grape variety. It is reminiscent of a maritime blend of smoke and iodine, combined with the freshness of limes and salt lemons, crisp apples and mineral notes. It is a unique, almost crystal clear wine that captures a pristine, almost primeval marine aroma with a hint of citrus.

Taste experience
In the mouth, this perception is reinforced. This Chablis shows a sparse austerity paired with pure limestone minerality, iodine saltiness and a cool citrus note. A nervous acid tension and an electrifying minerality dominate. However, a light creaminess and a delicate tannic texture provide balanced complexity. This wine promises outstanding drinkability with its salt-acid symbiosis. A more intense and dense wine aimed at discerning wine connoisseurs who value the purity of a wine over its charm.
