Wine profile
The name Côte aux Prêtres, or "Priest's Hill", reflects the vineyard's proximity to the pilgrimage route from Vézelay to Santiago de Compostela. This unique vineyard is located on a hill whose dome shape exposes it to both sunlight and wind. The soil is rich in small Kimmeridg limestones. After the hand harvest, the grapes were gently pressed and subjected to a long, natural fermentation. The Côte aux Prêtres matured in tanks and large wooden barrels, remaining on the fine lees. The finished Chablis was bottled without filtration and clarification, with only a small addition of sulphur.

Appearance
The straw yellow of this wine tends towards a strong tone.

Scent
The Côte aux Prêtres 2020 unfolds a pure, fleshy, robust and mineral aroma that creates excitement from the first sniff. Reminiscent of the juice of cédrats and Amalfi lemons, it also has a note of bergamot and manages to convey an idea of a spoonful of sweet and creamy lemon curd. In contrast to the absolute purity of Montserre, it has charming and invitingly warm accents of yellow apple and a touch of white peach. Accompanying notes of mint and bay leaf mingle with the typical hints of oyster shell and flint.

Taste
On the tongue, the Côte aux Prêtres unfolds an intense, exciting presence with a wonderfully concentrated, salty character. A fascinating combination of green, yellow and orange citrus notes, some stone and pome fruit, almonds, rock salt and white pepper determine the taste picture. The minerality is exciting, the acidity holds the tension from beginning to end and the texture is seductively creamy, yet finely marked by the phenolic. An impressive experience!
