Info about the wine
The designation Chablis Premier Cru is limited to 40 individual vineyards. 17 of these 40 vineyards have been classified as essential and the other 27 vineyards have been assigned to or subordinated to a main vineyard. Similar to the German VDP-Großes Gewächs, the yield is reduced to a maximum of 50 hectoliters per hectare. The restriction to the Chardonnay grape variety is self-evident.
Color
Bright, light golden yellow.
Nose
The 2020 Chablis Premier Cru Mont de Milieu from Domaine l'Enclos shows immense density, lots of freshness and fantastic depth. Apple, salt lemon, ginger, lemon balm open the round of this Burgundy that flows out of the glass like a clear mountain spring. With oxygen contact, fine toasted notes and butterscotch join in. All beautifully coated with sea spray, sea breeze and a hint of flint.
Palate
Fresh and at the same time gripping depth on the tongue, distinct saltiness, invigorating acidity and plenty of grip. The long finish has fine and stimulating bitter notes of lime peel. A wine with wonderful Burgundian finesse that still has potential for development in the future, but is already wonderful to enjoy at its current stage.
Decanting into the decanter and bulbous Burgundy glasses make it win additionally.
