Merlot 41 %, Cabernet Franc 26 %, Tempranillo 9 %, Cabernet Sauvignon 7 %, Petit Verdot 9 %, Syrah 8 %.
The best red wine sites are in Manincor, at the Seehof and at the Panholzerhof southeast-facing sites with lake views at 250-280 m above sea level. Strong sandy loam soils are interspersed with limestone gravel and other glacial rock deposits.
Info about the expansion
Each batch was pressed separately, the maceration took place in wooden vats, spontaneously with the grape's own yeasts. The maceration time was between 10 and 20 days, depending on the variety. The eighteen-month wooden ageing took place in barriques, with half of the barrels being new. The blending of the individual wines only took place shortly before bottling.
Color
Deep dark garnet red with delicate lightening towards the rim.
Nose
The 2020 Cassiano beguiles with intense fruit reminiscent of sour cherries, wild raspberries and cassis, while appearing refreshingly cool. The longer it sits in the glass, the more clearly the aromas of the previous ageing in wood emerge, reminiscent of noble tobacco, vanilla and freshly ground pepper. Its fragrance is accompanied by animating wild herbs reminiscent of rosemary, thyme and violets, which further emphasise its cool character. The nose already makes you want to take the first sip.
Palate
On the tongue, we encounter a very coherent drop, with polished tannin, wonderfully embedded in the juicy fruit. Herbal components underline the animating impression. A red wine that gives extreme drinking pleasure, great with intense and Italian-inspired cuisine.
Best enjoyed slightly chilled from a large glass.
