Wine information
The Catarratto was planted in 1992 in sandy and stony loam up to an altitude of 500 metres. The grapes were harvested by hand in the early hours of the morning and transferred to the cellar in small 8kg crates. The whole grapes were gently pressed a few hours after the harvest. After 24 hours, fermentation took place with selected yeasts at 15 °C, followed by maturation for six months in stainless steel on fine lees at 10 °C with weekly bâtonnage.
Color
Straw yellow with bright green reflections
Nose
The 12 filari Catarratto is a fine, mineral Sicilian that offers bright notes of camomile and orange blossom, broom and hay, a little lemon, pure cloves and herbs of the maquis.
Palate
On the palate, the wine impresses with its balance and pleasant light-coloured juiciness. There is plenty of citrus and the associated freshness and astringency, as well as herbs and something nutty. The finish is impressively long and persistent, savoury and fresh with a fine extract.
