Wine profile
Brunello di Montalcino comes from the picturesque vineyards of Podere Brizio, which form a picturesque backdrop southwest of Montalcino. They rest on a diverse landscape characterised by marl, limestone and maritime sand and clay soils. The Brunello is made from 100 % of the unique Sangiovese Grosso grape and has carried the organic label since 2015. This wine was fermented naturally and then spent 38 months in Slavonian oak barrels with a volume of 5.4 hectolitres. This was followed by careful bottle ageing to perfect the qualities of this exceptional wine.

Scent
With the first breath, an impressive variety of scents was in the room, characterised by a harmonious balance between tension and transparency. Memories of dried cherries and sour cherries rise, accompanied by wild sloes, light tobacco herb, dry scrubland and grilled herbs. Floral notes of dried violet flowers interweave with a mineral component to create a bouquet full of character.
Taste
With each sip, the Brunello reveals its taut structure, underpinned by a tangy acidity and fine tannins. Nevertheless, a pleasant creaminess caresses the tongue. The red fruit of the wine appears bright, crisp and juicy. Overall, the wine convinces with its flawless precision and a slightly salty finish with pleasing length. The wood aromas hold back elegantly and join the wine as silent partners.
Food combinations
Now joy and experimentation come into play: try this wine with ravioli stuffed with roasted beets and served with pecorino toscano. If you like it heartier, you can also enjoy it with a tasty braised rabbit with black olives and plenty of garlic.
