Boris Champy is a winemaker who has led legendary wineries such as Dominus in California, Louis Latour and Clos de Lambrays for decades. In 2017, he took over Didier Montchovet's domaine, founded in 1984. It is the first Demeter-certified vineyard in Burgundy! The estate now covers twelve hectares in the Hautes-Côtes de Beaune, which Boris Champy sees as the future of Burgundy due to climate change. Champy, a master of the elegant use of wood, places particular emphasis on ensuring that the vines are in a healthy environment with high biodiversity and extensive compensatory areas.
