- Cyril Bonnet’s Seconde Nature is the essence of artisanal Champagne craftsmanship. Open, inviting and characterful, an aromatic bouquet presents itself of grapefruits, Meyer lemons and kumquats with zests. These are joined by blonde tobacco, graphite and chalk, rounded off by notes of warm toast spread with butter and honey – sensual, finely spiced and yet of impressive precision.
- Palate
- On the palate, Bonnet’s unmistakable style reveals itself: spicy with a deliberately placed hint of oxidation, expressed in baked apples with their skins. Herbal-zesty and tobacco notes meet pulsing energy and lively minerality. Despite the complete absence of dosage, the Champagne offers an elegant, smooth extract sweetness and that seductive toast note. As it develops, red berries and herbs emerge.
- Finish
- Long, citric and fresh with a slightly saline note that noticeably enhances the drinking experience. The bubbles remain present right to the end – lively and fine in equal measure.
- Terroir & Origin
- The grapes come from the Premier Cru individual vineyard sites „Les Vigneules“, „Les Spectres“ and „Les Caquerets“ in Chamery with south-east exposure. The topsoil of chalky loam with limestone pebbles, the subsoil of sands and fossil shells, shape the mineral character.
- Grape Variety & Vinification
- Cuvée of 45% Pinot Noir, 40% Chardonnay and 15% Meunier. The Cœur de Cuvée underwent spontaneous fermentation, was aged for nine months in four-year-old 228- and 400-litre barrels, underwent malolactic fermentation and was disgorged unsulphited as Brut Nature. Bottling 05/2021, Disgorgement 09/2023.

- Red mullet with fennel and crustacean reduction, langoustine with calamansi and seaweed beurre blanc or chawanmushi with ginger dashi, mushrooms and kumquats – this Champagne demands refined cuisine of equal standing.
