The Jules Bonnet Rosé de Noirs is a champagne made from 100 % Pinot Noir. The fruit comes from four parcels of the Verzenay terroir, classified as Grand Cruas well as two parcels from the terroirs of Chamery, classified as Premier Cru. The average age of the Sélection massale is 55 years old. The vines are rooted in gravelly and calcareous sands on a limestone subsoil. The base wine from the Cœur de Cuvée was fermented spontaneously and matured in barriques for nine months. The wine underwent malolactic fermentation. The wine was not filtered and only slightly sulphurised, resulting in a total sulphur content of less than 35 mg/l. Before blending, 7 % of red Coteau Champenois were added to the white pressed wine. The dosage was 2 g/litre.

Nose
The Jules Bonnet Premier Cru Rosé is one of the few rosé champagnes that plays less with fruit and more with freshness, clarity and precision. Even on the nose, it is bright and clear with plenty of pomegranate juice, sour cherry and grapefruit. In the background, there are notes of crunchy apple, a little ginger and patisserie.
Palate
On the palate, too, this is a Champagne with lots of energy. It is pure and powerful with a crystal-clear acidity that provides a lot of pressure. The 2 grams of dosage are hardly noticeable, they are very well balanced so that the champagne retains its charm. And it does - in addition to the vibrant minerality, the citric notes, the red berries, the sour cherries and the chalkiness. A strong rosé!
