Wine information
This is a cuvée of different sites around Béru. What they all have in common are the stony Kimmeridge soils and the unusual altitude. Therefore, it is always 1 to 2 °C cooler than in the other vineyards, and the grapes ripen later. Accordingly, the harvest takes place a good two weeks later. The wines are more playful and more mineral than the Chablis from the valley of the Serein.
Color
pale straw yellow
Nose
The scent of this Chablis Combines slightly friable yellow pear and apple notes with ripe lemons, with a little peach and lots of dried herbs. Quite in the style of Athenaïs de Béru this wine with its light note of oxidation and wax in the nose reminds quite a little of a chenin blanc.
Palate
On the palate, however, it is quite a Chablis with an absolutely precise acidity that is present from the first moment until the finish. Bright and crystalline, this Chardonnay is much less mellow or ripe than the nose would have you believe. Instead, it is citrusy, gripping and wakeful.
