Nose
The nose reveals remarkable clarity and precision. Dominated by bright citrus flavours - lemon zest, lime, a hint of mandarin - the BAM! shows a youthful freshness that is complemented by subtle notes of lemon curd and lemon meringue. Underneath are mineral layers of lime and chalk, floral hints of white flowers and subtle nuances of pome fruit and herbs. A fragrance profile that combines elegance with complexity.
Palate
The true class of this champagne unfolds on the palate. It glides over the tongue with crystalline precision and electrifying acidity - carried by a mineral structure reminiscent of limestone runners. The Brut Nature dosage (0 g/L) allows the purity of the terroir to shine through unadulterated. With increasing warmth, a fine creaminess develops, accompanied by the first notes of autolysis: Puff pastry, delicately coated with vanilla cream. In spite of this development, the wine retains its razor-sharp precision and urgent, fresh minerality until the long, salty finish.

BAM! stands for Blanc (Pinot Blanc), Arbanne and Meslier - three forgotten Champagne grape varieties that Tarlant combines in this exceptional cuvée (27% Pinot Blanc, 27% Arbanne, 46% Petit Meslier). The grapes come from the single vineyard „Four à Chaux-Sables“ in Œuilly, characterised by Lutetian quartz sand over limestone. Spontaneous fermentation in Burgundian oak barrels, no malolactic fermentation, ageing with réserve wines from a solera managed since 2007. Disgorged after ten years on the lees - a champagne for purists and terroir enthusiasts.

The salty minerality and crisp acidity predestine this champagne for raw oysters, Scallop carpaccio or Hamachi sashimi. It also harmonises with Goat cheese, Smoked trout or a Risotto with lemon and herbs. The creaminess also contributes Poached sole with butter-lemon sauce.
