This wine is the product of a select harvest from one of the highest vineyard sites in the region, hand tended and nourished by volcanic soil. Only 3105 bottles of 0.75 litres, 90 bottles of 1.5 litres and 12 bottles of an impressive 6 litres were bottled.

A delicate golden yellow with silvery nuances unfolds in the glass and sparkles enticingly in the light.
Scent
With a bouquet that offers a kaleidoscope of aromas, the 2021 Auxerrois 350 N.N. captivates. Subtle fruity notes of wood pear, quince and citrus mingle with the floral scents of a flowery meadow and the spicy notes of fennel and aniseed. Stony accents and a refreshing freshness complete the picture and make you want to take the first sip.
Taste
As soon as the wine touches the palate, a play of fresh vitality, diverse herbal nuances, moderate 11.0 vol % alcohol and gentle acidity emerges. A versatile culinary partner that proves its strengths especially when accompanied by discreet fish dishes and varied vegetable cuisine. It is recommended to choose generous glasses for tasting this wine.

As an alternative to cauliflower soup with apple and almond, try a roast crust with apple and onion sauce. Instead of black salsify with orange-white wine foam and lemon thyme, combine it with a risotto with carrots and thyme. And as a companion for cod steamed with fennel salad, it can be just as convincing as with a good monkfish with crispy skin and a hint of fennel.
