Nose
With Attis Lias Finas, the name says it all. The contact with the fine yeast leaves clear traces. The yeast creates an impression of brioche and yeast plait with almonds and sultanas. Behind this, ripe yellow apples, quince compote and dried apricots reveal themselves. Salted almonds and some popcorn. Lemon zest and plenty of lime juice work loudly against it. Grapefruit, cantaloupe melon and ripe pineapple increasingly make room for themselves. Mint and lemon balm add a touch of freshness. Candied ginger is the sought-after and found contrast.
Palate
On the palate, it exposes the sensory impressions of the nose to infinity. Full of fruit concentration, elegance and intensity. Herbal aromas as well as citrus notes now determine the aroma picture. The yeast provides a gentle melt, but is clearly led by the perfectly tared acidity. Juicy, racy and cool. The acidity dances on the palate and makes the tongue click with pleasure. Very animating. A cool, mineral note lingers on for a long time. Great finish.
