The origin of the grapes is an intact ecosystem full of bees and insects. After harvesting, the grapes are completely destemmed, crushed and pressed according to ancient methods. Fermentation and ageing take place in clay amphorae. Without stabilisers and filtrations it found its way into the bottle.

Bright pomegranate red, delicate orange reflections
Nose
On the nose, it immediately shows its playful nature. Rooibos tea and red fruit tea vie for supremacy. Tree bark, cinnamon as well as clove, anise and roasted coriander seeds add rich spicy accents. Fennel and artichoke provide delicate vegetal notes, ingeniously spiced with a little red pepper and juniper. Eucalyptus and mint add cooling, ethereal nuances. A little sour cherry, red currant and wild strawberry make a very serious and not at all kitschy appearance. The fruit at the end complements this quite spicy Portuguese very nicely in the form of balance.
Palate
Vasco Croft from Aphros Wine provides us with the 2020 Phaunus Palhete, an enormously lean, juicy red wine. Whether as an aperitif or slightly chilled in the summer with barbecue cuisine, it offers very versatile uses. Its finesse, freshness and lightness at 11% alcohol by volume are unique. With all its elegance, it lives from an aromatic depth that is rarely found in this form. One could certainly build a bridge to light Mosel Rieslings. The spiciness comes to the fore again in a similar form to the nose. The associations with red fruit tea are now paired with an intense herbal spiciness. A fine spiciness together with positive bitter substances enlivens the palate by another dimension.
