Celler Credo is the still wine project of the sparkling wine producer Recaredo. Operated according to organic and biodynamic guidelines, La Volaina is the result of the initiative launched by Celler Credo together with the Granollers Natural History Museum to study the importance of butterflies. Made from 100% Parellada, the vines are located in Pla de Manlleu, at over 500 metres one of the highest villages in the Penedès. Vinification and bottling take place in the Celler Credo winery. All work is done by hand, alcoholic fermentation takes place spontaneously with natural yeasts. At a slender 9.5%, it offers plenty of flavour at low revs.

Pale yellow with green reflections.
Nose
Reneklodes, the skins of small clear apples and a large bunch of fresh kitchen herbs outline the nose of this clearly Mediterranean-influenced wine. Freshly mown summer meadows, a pile of hay and fresh herbal tea mark the vegetal, tart character, fruit does not actually take place. Currently marked by delicate fermentation notes, it quickly blossoms with increasing aeration in the glass.
Mouth
The herbaceous and tart impression continues on the palate. With leafy phenolics and good tannin, it has an animating and salivary effect. The acidity shines with distinguished restraint, the stimulatingly tart bitterness marks it as a clear child of its Mediterranean homeland. Notes of sage and citrus zest outline its aroma.
