Terroir & Origin
The Kamptal, characterised by loess and primary rock soils, produces wines of remarkable minerality and freshness. The Pannonian influences with warm days and cool nights create ideal conditions for the development of complex aromas. Loimer manages his vineyards according to biodynamic principles, which manifests itself in the purity and vitality of all his products – including this Verjus, which authentically captures the minerality and liveliness of the region.
Grape Variety & Vinification
Verjus is made from unripe grapes obtained during traditional crop thinning – a process that increases the quality of the remaining grapes. Loimer likely uses his characteristic varieties such as Grüner Veltliner or Riesling, which impart their typical acid structure and aromatic complexity to the juice. The juice is gently pressed and bottled without fermentation, preserving the natural fruit acidity and the green, herbaceous notes.
