This Champagne comes from Chouilly, a complex of different micro-terroirs known for its 100 % Chardonnay. Bottled in the spring of 2015 and disgorged with abundant care by hand à la volée in the autumn of 2021, it bears the coveted "Spécial Club" label, a special label coined by the long-established winemakers' association Club Trésors de Champagne.
It presents itself in a pale, delicate yellow with green reflections and a seductively fine perlage. The nose is enchanted by lively fruit notes - pear, quince, mandarin and star fruit spread out and are cleverly wrapped in a framework of chalky minerality, citrus undertones and a hint of ginger. Subtle notes of almond and brioche hint at a touch of luxury. The flavours are finely balanced and reflect the elegance of this exceptional champagne.
On the palate, it initially unfolds a fine and elegant style, perfectly complemented by the subtle perlage. It glides over the tongue with noble, bright fruit and leaves a salty trace that stimulates and inspires the appetite. Its finesse makes this inspiring champagne the perfect companion for dishes that do not need to compete for prominence but blend harmoniously.
Not to mention the perfectly complementary dishes that support rather than dominate the elegance of this champagne. Think creamy pasta with a sauce of celeriac and plenty of earthy juicy porcini mushrooms. Or a fine carpaccio of scallops, finished with a drizzle of olive oil and lemon. Another highlight could be a puff pastry filled with tender sweetbreads, which do even more justice to the opulent flavours of this champagne.
