Information
The grapes come from a unique chalky and calcareous vineyard in Villiers-aux-Nœuds with 70 % over 50 years old and 30 % over 30 years old Meunier vines. Accordingly, this is a single-varietal Pinot Meunier. There was no chaptalisation and no filtration or tartaric stabilisation. No sulphur was added when the wine was disgorged. Ambre de Solemme contains no dosage.
Color
Rosé to copper-coloured with lively perlage
Nose
The Meunier champagne with its unusual colour is subtle on the nose with notes of barberries and redcurrants, pomelo and herbs. There is a very fine aroma of almond biscuits and nougat in the background.
Palate
The palate is also characterised by rather acidic berry notes of barberry, redcurrant and pomegranate seeds. Grapefruit and pomelo bring savoury, tart notes to the palate. Ambre de Solemmewhich is chalky and salty with a fine mousseux and pleasant pressure.
