Nose
The 2015 Saint Aubin 1er Cru "Les Combes au Sud" is intense and powerful right from the start. It starts with ethereal notes of pickled mint, basil and lovage. Clear mineral hints of seaweed, algae and mussel shells emerge after sufficient oxygen contact, its fruit remains with hints of green apple, lime initially in the background, with advanced maturity it will be more prominent.
Palate
On the tongue, the 2015 Saint Aubin 1er Cru "Les Combes au Sud" is spicy and incisive. Juicy fullness, paired with fine tannins and spicy notes that are almost a little reminiscent of cinnamon and juniper. This makes it a powerful white wine that can be paired excellently with stronger cuisine. Its long finish points to its great storage potential!
Recommendation
Be sure to decant and don't drink it too cold, a few days of opening will make it win.
