Kai Schätzel has long since developed into a Kabinett specialist at Nierstein's Rote Hang. In the Hipping, an extraordinarily complex and yet light and buoyant Kabinett is created, which opens - typical for Schätzel - with notes of bacon and car repair shop, before the clear white and yellow fruit of nectarines, peaches, apples, and furthermore the phenolic and herbal charaker as well as the citric notes of red grapefruit and lime penetrate. But then they quickly take over, and as you bring the glass to your mouth, you catch a few more notes of ginger, cardamom and white as well as violet flowers.
Palate
As with the simpler KabiNett builds up during Hipping immense pressure on the palate. The wine has power and depth, but behaves like a young elf. 55 grams of sweetness with 11.5 % acidity and 7 % alcohol provide a lot of atmosphere and even more drinkability. This is as fresh as a mountain stream into which someone has sunk a few sugar beets. In addition, there is again a slight phenolic and a lot of minerality. The citrusy, demanding fruit components are complemented on the palate by red fruit with acidity, such as redcurrant and barberry, as well as salty notes. What a delicate gem, dancing between light, red and dark notes!
