The cuvée Racines de Trois represents the three roots by Waris-Larmandier. On the one hand, there are the three siblings who have come together to lead the project founded by their parents into the future. On the other hand, these are the three main grape varieties of Champagne, Chardonnay, Pinot Noir and Meunier, which come from three regions, the Côtes des Blancs, the Montagne de Reims and the Côte des Bar. 30 % of Pinot Noir come from the three southern localities of Bar-sur-Seine, Avirey-Lingey, Éguilly-sous-Bois, located on Kimmeridge limestone. 10 % of the cuvée are Pinot Noir and Pinot Meunier from the clayey limestone marl from villages of the Montagne de Reims, from Bligny and Chamery. 60 % of the cuvée are Chardonnay from the chalky soils of the Côtes des Blancs from the villages of Chouilly, Cramant, Avize, Oger and Mesnil-sur-Oger.
The grapes were harvested by hand and pressed in a traditional 4,000 kg Coquard press. Only the juice from the first run was used for fermentation. It was fermented spontaneously partly in stainless steel tanks, partly in 600-litre...demi–muids from Burgundy fermented and aged. Malolactic fermentation took place spontaneously after alcoholic fermentation. The base wines matured for six to 18 months, followed by 24 to 36 months of ageing on the lees. Racines de Trois is usually an assemblage from two vintages. The dosage is 9 g/l. Unlike most other champagnes, the pressure is 4.5 bar instead of 6 bar.

Nose
The Racines de Trois opens from the first moment finely spicy, creamy and silky smooth, just as if you had a tart with lemon curd, ripe pears and red apricot plums in front of you, garnished with lightly toasted sesame, with slivered almonds, red berries and underlined by lime and chalk.
Mouth
On the palate, the champagne seems like velvet and silk without shedding its mineral, slightly earthy and chalky corset. The Racines de Trois is very sensual with the fine dosage that brings together the melange of citrus fruits, berries, ripe pears and stone fruits and is infused with a crisp acidity. This is also supported by the restrained pressure typical for the house, which provides more vinosity. In addition, the mousseux is also creamy and fine. It is an excellent aperitif as well as a food companion, a real Brut all-rounder, but produced with craftsmanship and a sense of finesse and elegance.
