Pure Pinot Noir from the Côte des Bar. The vineyard is located in Polisot. Paul-Bastien Clergeot cultivates eight hectares in Polisot, Balnot sur Lagne and Les Riceys. This wine comes from a Pinot Noir parcel called Chevry, which was planted in 1975. The grapes were harvested on 21 August 2020 and matured in stainless steel. The V20 is the second vintage. It was disgorged on 13 January 2023. The dosage is 0 g/l.

Nose
The Chevry Cuvée Cuve V20 is a lively and fresh champagne right from the start, offering its Kimmeridge origins on the nose. The champagne is chalky and mineral, zesty and citrusy with red berries, juicy apple, white flowers and a little wax in the background.
Palate
The cuvée also ensures freshness and vibrancy on the palate. The champagne is bright and clear with a powerful acidity and crisp fruit. There are mainly pome fruit notes with apple and a little quince, some red berries and lots of lemon, as well as a hint of mandarin and grapefruit. Here, too, there is that slightly waxy note, but above all a pleasant punch on the palate.
