The Particella 128 is a single-varietal Spumante metodo classico from the Spergola d'Emilia grape variety. It comes from clayey-gravelly soils near Reggio Emilia. The name of the wine refers to the vineyard, whose plot number is 128. At 20 years old, it is Vanni Nizzoli's youngest vineyard. After hand harvesting into small crates, the grapes were fermented on the skins for five days in stainless steel. The wine was then aged in concrete and stainless steel for six months and on the lees for one year after bottling and second fermentation. There was no fining, no filtering, no sulphur addition and no dosage. The total sulphur is less than 10 mg.

The rare variety Spergola dell'Emilia, in this case macerated on the skins, provides a scent of apples and apple peel, honeysuckle and lemongrass. There are also notes of hops, of a little manzanilla, grapefruits and white peach.
Mouth
The Particella 128 creates a wonderful combination of elegance and rusticity on the palate. It is a very refreshing frothy wine with pressure and a bone-dry mouthfeel, which is further enhanced by the fact that the wine has a little tannin. The lively acidity and the noticeable perlage do their bit to cleanse the throat properly. This is fun from the very first moment.
