Wine description for Cuvée „Soléra“ Brut Nature from Olivier Horiot

Colour & appearance
Bright golden yellow with amber-coloured reflections. The perlage is fine and persistent, a sign of the long ageing in the Soléra system.
Nose
Complex, multi-layered bouquet with roasted hazelnuts, Brioche and candied lemon peel. Underneath, notes of Honeycomb, Dried apricots and a fine Oxidative seasoning, reminiscent of old sherry. The rare grape varieties Petit Meslier and Arbane give the champagne an extraordinary aromatic depth.
Palate
Despite Brut Nature - i.e. without dosage - the wine is surprisingly smooth and complex. Ripe pear, Quince and Almonds meet a salty minerality. The texture is creamy, almost oily, with a remarkable concentration. The acidity remains precise and lively without ever being dominant.
Departure
Exceptionally long and persistent with a fine Nuttiness and a touch of Dried hay. The salty minerality lingers elegantly and leaves a lasting impression of depth and complexity.
Terroir & origin
From the Riceys in the far south of Champagne, where Kimmeridge limestone soils provide exceptional minerality. Olivier Horiot cultivates his plots with the utmost care, vinifying each site separately - a common practice in Burgundy, but rare in Champagne.
Grape variety & vinification
A fascinating assemblage of Chardonnay with the almost forgotten grape varieties Petit Meslier and Arbane. The expansion takes place in Burgundy barrels, the maturation after the Soléra process - Different vintages are blended together, resulting in exceptional complexity and consistency. Bottled without dosage.
Food pairing suggestions
Perfect for fried turbot, Scallops with nut butter, matured Comté or Langoustines. The oxidative complexity harmonises perfectly with Morels in cream sauce or Sweetbreads.
