Info

The Auxerrois grows at an altitude of 350 metres on basalt rock. 70% are fermented in steel tanks. The remaining 30% are fermented in used Palatinate oak barrels.

10% of the total quantity was added as whole grapes to the fermenting must and left there for 9 months to impart these tannins, but also to force them into a compact structure.

In this vintage, which is atypically not 100% dry for Odinstal, this was a tried and tested means for Andreas Schumann to preserve the character and style of Odinstal.

Color

Bright, pale lemon yellow with delicate orange-gold reflections

Nose

The 2022 Auxerrois N.N. smells wonderfully nutty and of ripe stone fruit. Baked apples with marzipan and sultanas immediately spring to mind. Roasted almonds, chopped walnuts and Brazil nuts are clearly recognisable. Caramelised quince, baked pear and ripe red apple form its base. Tarte Tatin, covered pear tart and shortcrust pastry complement these notes very successfully. Apple and cherry blossom swirl in the background and provide a great deal of filigree. Dried herbs in the form of sage, oregano and marjoram add a certain spiciness. 

Palate

It clearly sets the tone from the very first sip. It has a calm and compact structure. A fine phenolic structure characterises it and the pleasant nuance of deliberate oxidation also brings out the nutty, doughy aromas on the palate. The acidity sets the pace, but never dominates. The fruit only plays a subordinate role, the other flavours are too brisk. Enormously varied on the palate. The bitter flavours are well-balanced and stimulate the thirst. The tarte tatin lingers in the aftertaste for several minutes.
