Wine information
Before bottling, the wine was stored on the fine lees for six months. It is the lightest Veltliner of the house. The grapes come from vines rooted in loam, loess and paragneiss. The wine was fermented spontaneously and bottled in April 2023. In addition to 11.5 vol-% alcohol, it has 2.5 grams of residual sugar and 5.4 grams of acidity.

Nose
The Grüner Veltliner Yeast Draught is characterised by apple blossom and green apples, some lemon and lime in combination with herbs and a hint of blond tobacco. It seems young and fresh at first, bright as well as delicately fragrant and has only slight yeasty notes.
Palate
On the palate, the sensation of liveliness, brightness and precision is confirmed. With the wines of the Nikolaihof, one has the impression that they are at least one quality level above what is indicated on the label. That is also the case here. The Hefeabzug, the winery's youngest Veltliner, seems so complete and has so much structure that you hardly notice its youth. But then you notice this wonderfully silky and yet so lively acidity, this playful lightness, these notes of young apple and citrus fruits, garnished with a spicy finish. This wine offers a lot of pleasure.
