Les Chemins d'Avize appears as the fourth site Champagne from the prestigious Larmandier-Bernier winery. This hearty drink, created from the Chardonnay grape variety, comes from the neighbouring Chemin de Plivot and Chemin de Flavigny vineyards. The fruit from our remarkable 50-year-old vines is lovingly pressed, gently clarified and transferred directly to the barrel. They undergo natural alcoholic and malolactic fermentation and finally age on their lees for one year. Each bottle receives at least five years of ageing sur lattes and is handpicked six months before release. This meticulous process contributes to a low dosage of only two g/l.

On closer inspection, the drink appears in a light golden yellow and shines with a fine mousseaux. Due to its first-class composition, this Avize champagne unfolds a rich and sensual bouquet. Fragrances of juicy apricots, crisp green pears and aromatic vinegars are released, underlined by notes of lemon confit and mandarin crust, fine spices and subtle hints of graphite and ginger. Its density and complexity are admirable.

Once on the palate, Les Chemins d'Avize prepares intense sensations. Explosions of ripe citrus, nougat and creamy pear, spiced with vanilla, cinnamon and a hint of ripe sweetness explode in your mouth cavity. Its acid structure appears sensual, not demanding, yet straightforward. Despite its immense power, it is elegance and sensuality that set the tone for this champagne. An impressive personal statement.

As a food companion, this champagne is wonderful with tender turbot served with chamomile flowers and mustard seeds, or rillettes of mackerel on crispy sourdough bread. Why not experiment with kara-age, the Japanese version of deep-fried chicken? A truly luxurious treat.
