Info
Cultivada is located in Seville, in the heart of Andalusia. They grow three fundamentally different olive oils. Arbequina, Hojiblanca and Picual. Depending on the vintage, there are three varietal pure oils as well as the Cuvée. The single variety Hojiblanca is a rarity. It is rare to find this variety bottled individually, as it is difficult to cultivate and is usually bottled as a blend. Harvested early and of course cold pressed. The cultivation of the olives and biodynamic oriented.
Color
Bright golden yellow, green tints
Nose
At first, it shows mainly vegetal notes that immediately recall green artichokes, fennel and anise. Green tomatoes, tomato stems and the scent of perennials are clearly present. This is joined by nuances of Mediterranean herbs such as basil and oregano. A little sage, green pepper and lime zest provide a fresh kick as well as a discreet spiciness.
Palate
Spice and sharpness are present, but show themselves very balanced from the beginning. The Hojiblanca lives from vitality and freshness. A pleasant acidity stretches the moment wonderfully into the length. The finish is totally mild and harmonious. Hardly any bitter tones and only a hint of spiciness. Rather restrained in the aromatics. The vegetal, herbal flavors echo only discreetly.
