Color
A luminous touch of purple dances with clear streaks of light around the edge, interspersed with silent flashing violet lights.
Scent
The 2017 Gevrey-Chambertin Ostrea whispers a gentle melody that is both airy and delicate and aromatic. Notes of wild raspberry, blackberry, cranberries, rosehip and orange peel celebrate the overture. Dancing in parallel are smart aromas of earthy, almost masculine depth in the form of leather, wood smoke, foliage and tobacco. Added to this is a fun mix of roasted walnuts, black truffle and gingerbread spice. An enchanting pleasure!
Taste
On the palate, the wine offers an abundance of refreshing fruit and a challenging acidity that creates a delicious balance. The tannins are ripe but continue to make their youthful presence felt. This is a delightfully delicious wine, an unpolished gem that will only reveal its full glorious glory after the addition of oxygen and further maturation. If you are in a hurry, forget the wine in sight for two days in the decanter wine cellar and then serve it with hearty, flavourful dishes. For every Pinot lover, this will be a feast for the palate - guaranteed!
Be sure to let it breathe!
Interchangeable food pairings: Porcini mushroom risotto with unique truffle flavour, crispy roast duck with a glazed orange port sauce and chard potato patties, or roast hare with a rich Civet sauce, black truffles and fine celeriac puree.
