Nose
The just over five years of yeast storage leave their footprints in Franz Keller's Grande Cuvée. Toasted almonds, brioche and almond plait are clearly recognisable. Some fresh as well as candied ginger are also omnipresent in the glass. Abundant yellow fruits like mirabelle, khaki and apricots give it a soft component along the way. Green apple provides freshness and lightness.
Palate
Multi-layered and multi-faceted, it spreads out on the palate. A delicate yeasty melt meets compact saltiness. The acidity is present, but not dominant. The mousseux distributes the acid peaks throughout the mouth. Mountain meadow hay and dried kitchen herbs stand next to the yeast pastry in the reverberation. The nutty, yeasty notes still have an effect on the palate without conveying heaviness. Totally balanced and harmonious on the palate.
