Maturity process
Produced in a natural process using wild yeasts, then refined in Stockinger barrels, concrete eggs and cement vats for a period of eight months.

Aroma
The 2019 Improvisació is a remarkable drop that initiates a voyage of sensory discovery with its robust fruit notes evoking associations of green mango, nashi pear and apple skin. With sufficient aeration, it develops deep aromas of roasted almonds, yeast and delicate white chocolate. Clear notes of wild sage and fennel herb add harmony to its complex aromatic profile.
Taste
This wine shows both vitality and persistence on the palate. Its emphasis on intense spice and salty minerality comes to the fore in the early stages. With increasing maturity, the fruit aspects become more intense and concise. This multi-faceted wine is already excellently suited as a gastronomic companion.
Culinary pairings
Enjoy the wine in combination with tart stuffed peppers and pine nuts, sun-dried tomatoes and rosemary. Try a crispy tart with plum farce, salted almonds, lardo and a hint of wild mushroom. Equally recommended is a tender rabbit leg dish accompanied by roasted garlic, fresh bay leaf and chickpeas.
