Wine information
A champagne that comes from Chardonnay vines that are over 60 years old. They are deeply rooted in the single vineyard Les Hauts Nemery in Avize, which has always been cultivated in an organic and biodynamic way, the cultivation also still traditionally supervised by horse. The base wine thrives spontaneously in oak barrels and is aged on its lees. The 2018 vintage was classified as Extra Brut with only 3 grams of sugar per litre. A quarter of the wine is supplemented from a permanent reserve. The champagne bottle was disgorged on 17 May 2022.
Appearance
This wine presents a medium straw yellow colour and a serenely mousse-like brilliance.
Scent
The Grand Cru Mycorhize Extra Brut 2018 unfolds a fragrance on the nose reminiscent of lemon curd and lemon peel, underpinned with freshness of apples and a hint of white peach. Nuances of freshly baked bread, white nougat and nuts resonate. Lime and chalk can be found in the bouquet as well as accents of lime blossom and acacia pollen.
Taste
On the palate, the Blanc de Blancs is energetic and structured, concentrated but at the same time crisp, fresh and citrusy, complemented by notes of ripe apples, pears and red berries. This champagne maintains an excellent balance between impressive power and fine subtlety, between a discreet, elegant sweetness and a pleasant spiciness, which suits it exceptionally well.
Food suggestions
Try this excellent champagne with grilled octopus with lemon and Mediterranean herbs, or with sea bass baked in a salt crust and refined with lemon thyme. As a vegetarian alternative, it goes excellently with tofu pockets filled with a healthy shiitake mushroom rice.
