Info about the wine

François de Nicolay is the name of the Négoce winery under the management of the family-owned Domaine Chandon de Briailles in Savigny-Lès-Beaune on the Côte de Beaune. This means that only wines are produced and sold that do not come from the estate's own land. The grapes, musts or wines used come from certified organic or biodynamic vineyards or vineyards undergoing conversion. The wines are matured in the Chandon et Briailles cellar and marketed under their own label. The Bourgogne Blanc "La Grande Châtelaine" comes from a plot of vines with an average age of 30 years and a vine density of 10,000/hectare. It was fermented without added yeasts for one to six months before being matured in barriques for a further 12 months.

Nose

The 2021 Côtes de Beaune "La Grande Chatelaine" shows noble restraint on the nose. In addition to apple, quince and lemon, we encounter lime blossom, a little aniseed and camomile. The fine and skilful use of wood is reflected in subtle aromas of vanilla, bread crust and light tobacco. Even on the nose, this is a harmonious, elegant and supple white Burgundy.

Palate

It transports this elegance wonderfully to the tongue, where it shines with fruit and a fine acidity curve. With every sip, you are tempted to take another, and its fine saltiness and minerality awaken the desire for culinary accompaniment.

Enjoy not too cold from large Burgundy glasses.
