Let us consider this sparkling wine
The basis of this delicious drink is a 2015 Riesling that spent two full years in a wooden barrel before being bottled for a second fermentation and finally disgorged in April 2023. The whole thing was done without adding any dosage.
Colour and appearance
The drink has a deep golden yellow colour and is characterised by fine bubbles that extend far beyond its mousseux.
Fragrance
The 2015 Riesling Sekt brut nature Réserve by Clemens Busch unfolds in all its juiciness and expressive charm. With ripe apple, orange, mango, honey and a bouquet of grasses and flowers, it invites sensory discovery. Memorable minerality together with cool, stony notes frame this orchard, complemented by hints of bread crust, light tobacco, dried oyster shell and seaweed.
On the palate
On the palate, the fruity richness already predicted on the nose unfolds with a perfect perlage that is well integrated and very refreshing. Its complex and vinous structure presents itself full of intensity with plenty of grip, saltiness and depth. Clemens sets real standards here with a spectacular vintner's sparkling wine that is at its culinary best. Do not serve this special drop too cool and prefer bulbous champagne glasses or Burgundy goblets.
Gastronomic recommendations
Try a refreshing green gazpacho with fresh goat cheese and apple, accompanied by grissini. Or treat your palate to fines de claires oysters garnished with pink grapefruit fillets. Another delicious option would be seared scallops on a bed of wakame salad, topped off with orange wedges.
