Character
Clemens Busch ranks among the pioneers of biodynamic viticulture on the Mosel and is regarded as one of Germany’s most uncompromising advocates of the terroir philosophy. His wines are precise reflections of their origin, characterised by mineral tension and a clarity that is unparalleled. The Birnbaum Reserve embodies Busch’s philosophy: reduced yields, late harvest and spontaneous fermentation with natural yeasts. At a moderate alcohol content of 11.5% vol., this Riesling displays that balance between ripeness and freshness which distinguishes great Mosel wines.
Terroir & Origin
The Birnbaum vineyard site belongs to the steep slate slopes of Pünderich on the Mosel. The Devonian slate terroir imparts its characteristic stony minerality and salinity to the wines. Clemens Busch manages his parcels according to biodynamic principles, resulting in living soils and vines with deep root systems. The cool Mosel climate with its extreme hillside locations ensures long growing seasons and thus wines of extraordinary complexity and ageing potential.
Grape Variety & Vinification
Riesling finds its purest expression on the Mosel. Busch works in the cellar with minimalist principles: the grapes are fermented spontaneously, the wine matures on full lees in traditional wooden vats. This method preserves the primary fruit and allows the wine time to develop its inner structure. The Reserve designation indicates a selection of the finest parcels, old vines and special care both in the vineyard and cellar.
Food Pairing Suggestions
A Riesling of this style harmonises beautifully with smoked trout, scallops with lemon butter or asparagus with hollandaise. The wine’s minerality complements oysters and seafood perfectly.
