Colour & Appearance
Dense purple with luminous violet reflections – a Cabernet Franc of visual intensity that already reveals its concentration in the glass.
Nose
Here we see purebred Loire Cabernet Franc in all its glory: mulberries and blackcurrant meet violets and liquorice, whilst blackberry, blueberry and damson weave a dense yet never heavy fruit structure. The spicy side impresses with cinnamon, clove and anise, complemented by herbal notes of lovage, rosemary and thyme – an aromatic complexity that perfectly captures the cool character of the appellation.
Palate
Remarkable: this Cabernet Franc comes through with barely perceptible tannin, instead presenting itself in silky texture with gripping juiciness. The dark fruit stands cool and refined in the glass, carried by a vital acidity structure. Red pepper – both raw and cooked – distinctly characterises the wine, floral notes return. What sets this wine apart: its fleshy, almost bloody texture combined with elegance and freshness.
Finish
Long, cool and threaded through with the characteristic pepper note, with floral hints and an acidity that guarantees length and drinking flow.
Terroir & Origin
The 45 to 55-year-old vines are rooted in loamy-silty soil on sandstone as well as in red flint on Tuffeau (limestone) – those Loire-typical soils that give Cabernet Franc its mineral coolness.
Grape Variety & Vinification
Hand-harvested in 12-kilo crates at modest 40 hl/ha yields. 30-day maceration with minimal pumping over, twelve months ageing on fine lees in older Burgundy Pièces (5-7 years old), followed by a further six months in wooden vat – a vinification that perfectly balances fruit and structure.
Food Pairing Suggestions
Braised pork cheeks with spiced jus, short rib with hoisin sauce, but also surprisingly good with beetroot baked in salt crust with basil pesto – the wine pairs well with both robust meat dishes and earthy vegetable flavours.
