The vines of the cabernet franc are 45 to 55 years old. The vines stand in loamy silty soil on sandstone as well as in red flint on tuffeau .

The yield is 40 hl/ha. The grapes were harvested by hand in 12-kilo crates. They were destemmed and fermented over 30 days with only infrequent pumping over. They were then aged for twelve months on the fine lees in Burgundian Pièces from five to seven years. The cuvée then matured again for half a year in the piece barrel.

Color

Dense purple, violet reflections

Nose

Pure Cabernet Franc successfully combines dark fruit with a wild spiciness and meaty attributes. On the nose, mulberries, cassis, violets and liquorice fight for aromatic supremacy. Around it, a multitude of dark berries and stone fruits, such as plums, blackberries, blueberries and plums, cavort. The fruit seems very densely woven without conveying heaviness - and that is the high art. Cinnamon, clove and aniseed provide a good portion from the spice cupboard. A small breeze of lovage, rosemary and thyme set the tart final chord under a successful nose.

Palate

Here, the 2019 Caberent Franc from Clau de Nell comes along completely without tannin. Dense, dark fruit on the palate, standing in the glass as if wrapped in silk. Cool, full of finesse and elegance. It stands juicily in the glass and delivers a good portion of wine. Red peppers - cooked and in their raw state clearly characterise the reverberation. The floral notes also come to the fore again. Despite all the fruitiness, it lives from a gripping acidity and the cool framework. Absolutely meaty and bloody at the same time in the very best sense.
